Apricot and Coconut Lumpy Log

HOW TO PREPARE

Place all ingredients, except for the coconut, in a large bowl and mix to combine.

Divide the mixture into thirds for ease of handling. Roll each piece into a log shape, using wet hands. Coat each log in coconut, wrap in plastic wrap and place in the fridge for 2 hours, until firm.

Slice before serving.
