Ingredients

  • 1/3 cup butter or 65 g, melted
  • 2 eggs
  • 2 teaspoons vanilla powder
  • 1 tin NESTLÉ® Sweetened Condensed Milk or 397 g
  • 1½ cups semolina or 240 g
  • 1½ cups white self-raising flour or 210 g
  • ¾ cup corn flour or 90 g
  • 2 teaspoons baking powder
  • ¼ cup ground almonds or 25 g
  • Lemon zest, one medium piece
  • 2 cups oil for deep frying
  • 2 cups sugar syrup or 500 g

Preparation

Combine butter, eggs, vanilla powder and NESTLÉ® Sweetened Condensed Milk in a bowl. Beat until well combined.

Add semolina, self raising flour, corn flour, baking powder, almond and lemon zest. Beat until smooth dough is formed. Cover with cling film and chill for 2½ hours.

Form the dough into small balls and deep fry in 170°C hot oil until golden brown.

Dip the balls into the syrup for 2-3 minutes then remove and place in a serving dish.

Cooking tips : The oil should not be too hot or else the semolina balls will burn.
