Ingredients

  • 4 packets puff pastry or 1 kg, thawed if frozen
  • ½ cup fig jam or 125 g
  • ½ cup butter or 100 g
  • 1 tin NESTLÉ® Sweetened Condensed Milk or 397 g
  • 4 eggs, separate egg yolks and egg whites
  • 2 cups unsalted cashew nuts or 300 g, roasted and ground
  • 2 tablespoons plain flour
  • ½ cup coconut flesh, dried and grated or 50 g

Preparation

Roll out the pastry sheets and cut them into 12cm x 23cm sheets.

Spread figs jam evenly over pastry leaving 1cm of the edges plain.

In a bowl, beat butter and NESTLÉ® Sweetened Condensed Milk until creamy. Beat in egg yolks, cashew nuts, flour and grated coconut. Mix well until a homogenous mixture is formed.

Spread mixture evenly over jam, brush edges of pastry with egg white.

Roll up pastry sheets to form rolls that similar to Swiss rolls.

Place rolls on a greased oven tray. Brush with egg whites and bake in a 220°C oven for 20 to 25 minutes until golden.

Serving tips : - Brush ready rolls with melted orange or pineapple jam instead of icing sugar for a glazed texture. - Try different shapes instead of Swiss roll shape.
