Ingredients

  • 3 tablespoons vegetable oil
  • 1 medium onion or 125 g, chopped
  • 3 cloves garlic, crushed
  • 700 g okra, large size, trimmed and cut into halves
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground coriander
  • 2 medium tomatoes or 300 g, peeled and diced
  • 2 tablespoons tomato paste
  • ½ cup coriander leaves or 35 g, chopped
  • 2 cubes MAGGI® Chicken Bouillon
  • 4 cups water or 1 liter
  • 2 medium potatoes or 500 g, cut into large cubes

Preparation

Heat oil in a large sauce pan. Add onion and garlic then cook for 4 minutes or until they become golden in color.

Add okra. Stir for 4 minutes then add spices, tomato, tomato paste, coriander, MAGGI® Chicken Bouillon cubes and water.

Bring to boil, simmer over low heat for 15 minutes or until okra is almost cooked.

Add potatoes, cover and simmer over low heat for another 15-20 minutes or until it's cooked.

Serving tips : Garnish with chopped fresh coriander and serve with cooked rice.
