Combine flour, coconut, egg yolk, brown sugar and butter. Mix well.
Press into base of greased 20x25cm baking tin and bake in a preheated oven at 180°C for 10 minutes and cool slightly.
Place apricot cubes in pan with enough water to just cover, bring to the boil then reduce heat and simmer for 2 minutes. Remove from heat, cool and drain.
Combine the prepared apricot with NESTLÉ Sweetened Condensed Milk, the extra coconut, cracked cashew nuts, eggs and vanilla; Mix well and spread over base.
Bake in a preheated oven at 180°C for 20-25 minutes or until the middle is firm.
Spread dark and white melted chocolate over the top and allow setting before slicing.
