Ingredients
½ cup white self-raising flour or 70 g
½ cup desiccated coconut or 50 g
1 egg yolk
2 tablespoons brown sugar
¼ cup butter or 65 ml, melted
1 cup dried apricots or 80 g, cut into small cubes
1 tin NESTLÉ® Sweetened Condensed Milk or 397 g
1 cup desiccated coconut or 100 g, extra
¾ cup unsalted cashew nuts or 110 g, toasted and cracked
2 eggs
1 teaspoon vanilla essence
100 g dark chocolate, melted
100 g white chocolate, melted
Preparation
Combine flour, coconut, egg yolk, brown sugar and butter. Mix well.
Press into base of greased 20x25cm baking tin and bake in a preheated oven at 180°C for 10 minutes and cool slightly.
Place apricot cubes in pan with enough water to just cover, bring to the boil then reduce heat and simmer for 2 minutes. Remove from heat, cool and drain.
Combine the prepared apricot with NESTLÉ® Sweetened Condensed Milk , the extra coconut, cracked cashew nuts, eggs and vanilla; Mix well and spread over base.
Bake in a preheated oven at 180°C for 20-25 minutes or until the middle is firm.
Spread dark and white melted chocolate over the top and allow setting before slicing.
