Ingredients

2 tablespoons olive oil

2 small onions or 200 g, chopped

4 cloves garlic, crushed

1 tablespoon grated ginger

1 bay leaf

1 tablespoon tomato paste

½ cup coriander leaves or 35 g, chopped

3 medium tomatoes or 450 g, chopped

1 teaspoon ground turmeric

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon ground black pepper

1 small red bell pepper or 100 g, cut into chunks

2 cups water or 500 ml

2 cubes MAGGI® Chicken Less Salt Bouillon

750 g white fish fillets, cut into large cubes

Preparation

Heat oil in a large pan, add onions, garlic, ginger and bay leaf. Cook over medium heat for 5-6 minutes or until onions are almost golden brown.

Add tomato paste, coriander, chopped tomato, spices and bell pepper. Cover and cook for 6 minutes.

Add water, MAGGI® Chicken Less Salt Bouillon cubes and bring to boil. Then simmer for 5 minutes.

Add fish cubes and simmer while covered for 10-15 minutes or until fish is cooked.

Serve with cooked rice.
