9 baby zucchini or 600 g, cut into large chunks
2 teaspoons salt
1 tablespoon vegetable oil or 15 ml
1 tablespoon olive oil or 15 ml
1 medium onion or 100 g, chopped
3 cloves garlic, finely chopped
1 tablespoon tomato paste
1 cup water or 250 ml, hot
2 cubes MAGGI® Chicken Bouillon or 20 g
2 cans tomatoes, canned with juice or 800 g, crushed
1 teaspoon dried basil
1 teaspoon ground allspice
2 teaspoons lime juice or 10 ml, and Zest from one Lime
1 packet spaghetti or 500 g
8 cups water or 2 liters
2 tablespoons coriander leaves, roughly chopped
Place cut Zucchinis in a mixing bowl. Sprinkle with salt and drizzle with Vegetable Oil. Allow to marinate for 10 minutes, and grill in an oven for 7 minutes on each side or until golden on the out-side.
To make Tomato Sauce: Heat Olive Oil and sauté Onions and cook until soft.
Add Garlic, and Tomato Paste and sauté for an additional 1 minute.
Add Hot Water, MAGGI® Chicken Bouillon , Crushed Tomatoes, Basil and All-Spice and allow to simmer on medium low heat for 20 minutes.
Stir in Lim Juice and Zest and remove from heat.
Meanwhile cook Pasta in boiling Water until Aldente. Drain pasta, discard water, and return to empty pot.
Add sauce to Pasta and gently coat with sauce, add fresh Coriander Leaves and serve immediately.
