Add water, coconut milk, MAGGI Cream of Mushroom Soup, curry paste and ginger to a large saucepan. Bring to boil under constant stirring.
Add chicken and carrot, simmer over low heat for 10 minutes or until chicken is cooked.
Stir in fresh coriander leaves and serve.
