Mix the rice, water and MAGGI Chicken Stock cubes in a pot. Cover and cook on low heat for 20-25 minutes or until the rice is cooked.
Prepare an omelet with the eggs, roll it then chop it into strips. Remove and set aside.
Heat oil in a pan, add onions, ginger and cook on medium heat for 4-5 minutes.
Add Soy sauce, fresh coriander, cucumber, chopped omelet and the cooked rice. Mix the ingredients well and remove from heat.
Place the fried rice on a serving dish, serve next to a grilled fish, meat or chicken.
