In a large saucepan, add pumpkin, onion and water. Bring to boil then cover and simmer for 15 minutes until tender.
Place pumpkin and stock in a food processor or blender. Process until smooth.
Return pumpkin to the saucepan, add MAGGI Cream of Mushroom Soup, bring to boil and simmer for 10 minutes.
Season with salt and pepper. Serve with toasted croutons.
