Heat oil in a large sauce pan. Add onions and garlic and cook for 3-4 minutes or until it becomes yellow in color then add the minced beef. Cook for another 5 minutes.
Add eggplant, baby zucchinis, carrots and spices. Stir then add tomatoes, tomato paste, coriander, MAGGI Chicken Stock cubes and water.
Bring to boil, simmer over low heat for 20-25 minutes or until vegetables are cooked.
