  • 130 g softened butter
  • 0.5 cup or 100 g caster sugar
  • 1 egg yolk
  • 1.5 cups or 210 g sifted plain flour
  • 1 teaspoon baking powder
  • 1 tin Nestlé® Sweetened Condensed Milk or 397 g
  • 1 cup unsalted cashew nuts or 150 g, toasted and finely chopped
  • 1 teaspoon vanilla essence
  • 1 cup desiccated coconut or 100 g
  • 1 egg

How to prepare

  1. Beat the butter and caster sugar for 5 minutes until creamy, add the egg yolk and beat well.
  2. Fold in the flour and baking powder into the mixture, mix well then press into the base of a 28cm x 24cm baking tin lined with baking paper.
  3. Combine Nestlé® Sweetened Condensed Milk, cashew nuts, vanilla, coconut and egg, mix well and pour over the prepared base.
  4. Bake for 20-25 minutes in a 180°C preheated oven. Remove from oven to cool down to room temperature.
  5. Cut into small slices and serve.
