  • For the almond biscuits:
  • 8 Egg whites
  • 2.5 cups sugar or 600 g
  • 1 cup brown sugar or 75 g
  • 2.75 cups ground almonds or 375 g
  • 0.5 cup plain flour or 75 g
  • 0.25 tin Nestlé® Sweetened Condensed Milk or 100 g
  • For the orange marmalade:
  • 2 oranges, large oranges with peel, thinly sliced
  • 0.5 cup sugar or 100 g
  • 0.75 tablespoon sugar syrup, (glucose)
  • 0.5 cup orange juice, chilled
  • 1 pinch of white ground pepper
  • For the dark mousse:
  • 400 g dark chocolate, 70% cocoa
  • 3.75 cups whipped cream or 900 g
  • 3 gelatin leaves, soaked in cold water for 5 minutes
  • 0.75 tin Nestlé® Sweetened Condensed Milk or 300 g

How to prepare

  1. To prepare the almond biscuit, whip first the egg whites with the regular sugar and brown sugar for 10 minutes or until stiff. Add the rest of the ingredients into the mixture and mix with a spatula, and then add the NESTLÉ Sweetened Condensed Milk. Use a rectangular metal ring to cook the biscuit; pour the mixture into the ring and bake in a preheated oven at 180 °C for 15 minutes, or until golden in color, and keep aside to cool.
  2. For the orange marmalade, mix all the ingredients together and cook in a large saucepan for 20-30 minutes on low heat to obtain a thick and juicy texture.
  3. For the dark mousse, melt the chocolate. Whip the cream, melt the gelatin and mix them together with the NESTLÉ Sweetened Condensed Milk and the melted chocolate.
  4. Pour the orange marmalade over the prepared almond biscuit, and then cover with a layer of chocolate mousse. Keep in the freezer until set, then remove the ring, cut into slices and serve.
