  • For papaya caramel:
  • 1 tin NESTLÉ Sweetened Condensed Milk or 397 g
  • 1 Papaya or 200 g, ripe, peeled and mashed
  • For the banana:
  • ½ cup all purpose flour or 70 g
  • ¼ cup caster sugar or 50 g
  • 2 tablespoons corn flour
  • ½ cup water or 125 ml
  • 5 small bananas or 700 g, half ripe
  • 2 cups oil for deep frying or 440 g

How to prepare

  1. To prepare the caramel: place NESTLÉ Sweetened Condensed Milk and the mashed papaya in a saucepan. Cook over medium heat, stirring continuously for 6-8 minutes or until the mixture thickens. Remove and chill.
  2. In a bowl sift together the flour, caster sugar, and cornstarch, add the water gradually and stir until the mixture is smooth. Set aside.
  3. Peel the bananas and cut crosswise into 4 cm lengths then mix it carefully with the mixture.
  4. Heat the oil to 180°C, use a fork to lift the banana slices from the mixture once at a time then deep fry in the hot oil, a few at a time, turning often until golden brown. Transfer to a paper towel to drain.
  5. To serve: spread 1 teaspoon of the papaya caramel on each fried banana slice and serve.
