  • 2.5 cups or 250 g digestive biscuits crumbled
  • 0.5 cup unsalted melted butter or 100 g
  • For the filling:
  • 1 tin Nestlé® Sweetened Condensed Milk or 397 g
  • 320 ml liquid cream or 1¼ cup
  • 4 tablespoons fresh lime juice
  • 3 tablespoons lemon juice
  • 1 teaspoon Lime zest
  • 1 tablespoon gelatine powder dissolved in 2 tablespoons hot water

Combine biscuit crumbs and butter in a bowl, rub the ingredients to combine well, press the mixture over the base and sides of a 26cm loose bottom tart tin. Set in the fridge for 10 minutes.

Combine Nestlé® Sweetened Condensed Milk, liquid cream, lime juice, lemon juice and grated lime zest in a mixing bowl and whip for 4-5 minutes or until mixture becomes almost thick.

Pour the dissolved gelatine over with constant whipping until well combined then pour evenly over the prepared base.

Place in fridge for 3 hours until it sets then serve.
