Add water, coconut milk, MAGGI Cream of Mushroom Soup, curry paste and ginger to a large saucepan.Bring to a boil under constant stirring.

Add chicken and carrot, simmer over low heat for 10 minutes or until chicken is cooked.

Stir in fresh coriander leaves and serve.
