Heat oil in a heavy saucepan, add and cook onion, chili and garlic over medium heat till onion are soft but not brown.

Add chicken and stir for 2 minutes. Add tomato, MAGGI Chicken Stock cubes, water, tomato paste and cumin powder. Cover and cook over low heat for 30 minutes.

Add fresh chopped coriander and stir well.

Serve with cooked rice or with tortillas.
