Ingredients 13 items

  • 2 cups vegetable oil for frying
  • 600 g frozen okra thawed
  • 2 tablespoons olive oil
  • 1 medium or 125 g onion chopped
  • 5 cloves garlic sliced
  • 4 tablespoons chopped coriander leaves
  • 2 medium tomatoes or 300 g, peeled and pureed
  • 2½ cups or 625 ml of water
  • 2 cubes MAGGI Vegetable Stock
  • 2 tablespoons tomato paste
  • ½ teaspoons ground coriander
  • ¼ g ground cinnamon
  • ¼ g white ground pepper

How to prepare

  1. Heat oil in a large saucepan and deep fry okra until it’s lightly golden in color. Remove okra from the oil and place it in a strainer and set aside.
  2. Warm olive oil in a medium saucepan and sauté onion until it's tender then add garlic and coriander and stir until fragrant. Add the prepared okra, tomato, water, MAGGI Vegetable Stock cubes, tomato paste, and spices.
  3. Bring to a boil and simmer over low heat for 20-25 minutes or until okra is tender (add water if it’s needed).
Do you avoid fried dishes because of a high blood cholesterol level or being overweight? You can still enjoy this appealing okra dish, but instead of deep- frying the okra, stir-fry it with the rest of the ingredients and add a few drops of lemon juice to minimise its gluey texture.
