Ingredients 16 items

  • 3 tablespoons vegetable oil
  • 1 medium onion or 125 g, chopped
  • 3 cloves garlic, crushed
  • 700 g okra large size, trimmed and cut into halves
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cumin
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground coriander
  • 2 medium tomatoes or 300 g, peeled and diced
  • 2 tablespoons tomato paste
  • ½ cup coriander leaves or 35 g, chopped
  • 2 cubes MAGGI Chicken Stock
  • 4 cups water or 1 liter
  • 2 medium potatoes or 500 g, cut into large cubes

How to prepare

  1. Heat oil in a large saucepan. Add onion and garlic then cook for 4 minutes or until they become golden in color.
  2. Add okra. Stir for 4 minutes then add spices, tomato, tomato paste, coriander, MAGGI Chicken Stock cubes and water.
  3. Bring to a boil, simmer over low heat for 15 minutes or until okra is almost cooked.
  4. Add potatoes, cover and simmer over low heat for another 15-20 minutes or until it's cooked.
